I hate to admit that I’m really not even sure the last time I was able to come up for air long enough to join in a Tuesdays with Dorie. The past several weeks haven’t just passed me by, they were on a rocket ship and headed away at warp speed! Seems don’t seem to be inclined to slow down, but I’m determined to claim back a bit more of my time for a little bit of ‘me time.’

While I haven’t been able to find a spare minute to write at all, I have found ample opportunity to bake and cook up a storm and once again find myself with a ridiculous number of delightful creations to tell you about, including pictures, and no time to write. On that note, you’ll understand why I’ll keep this short and sweet – which if your schedule is going anything like mine these days, short and sweet is a really good thing!

I thoroughly enjoyed making this week’s Tuesdays with Dorie recipe and just couldn’t pass it by, especially since it was chosen by my friend, Katrina at Baking and Boys.  I have probably been guilty of passing this recipe by a number of times over the past few years and am glad to now have it in my repertoire! It couldn’t be easier to make since it is indeed a cake made by hand mixing ‘muffin’ method, which makes it easy and quick. The fact that it is oats, sugar, flour, brown sugar, apple, butter, pecans and few other yummy ingredients all cobbled together and dumped in one cake pan makes it a definite favorite just for sake of ease. Add in the fact that it is now considered a ‘cake’ and that this means I don’t have to treat it the way I would a humble muffin and we are in business!

I mean, I wouldn’t slather a muffin with some lightly whipped, cinnamon and vanilla spiced whipped cream, but a cake? Yes indeed. Cake is subject to all kinds of glorification around our house. Just look at that Chocolate Pumpkin Cake I made and you’ll be left in no doubt of that.

That all looks delicious. I love your photos – nice presentation! I feel the same way about coming up for air. But I managed to get this cake baked! And it was good.

This looks like a cake I would love. And we just went apple picking so its a perfect choice.
