As my journey through the #KraftFreshTake challenge is drawing to a close I’m excited to be able to offer up a fun giveaway for my readers. Who wouldn’t want to win a $100 American Express Gift Card? No one, that’s who! It really couldn’t be easier to enter. If you’ve been following along through my last few posts about the #KraftFreshTake program then you’ve probably already been thinking what you would do with the different flavors. Obviously, I had the ease of using ground beef and ground turkey respectively on my mind when I made the sliders and the glazed turkey meatballs. What would you make? Which variety would you use?

I’ve talked a little bit through my posts about what inspired my recipes using the Southwest Three Cheese variety of the #KraftFreshTake cheese and seasoned breadcrumb packages. What you should understand is that at the time this challenge started we were buried under ice and snow. All I could think about was being somewhere warm, balmy and with lots of sunshine. While my husband travels quite a lot, I am home with the kids and pretty much don’t get to travel at all. I’d like to, but life doesn’t always quite work out the way we want, does it? What I can do is dream.

During this challenge I was most inspired by images of the Southwest where it was warmer than here, sunnier than here, and had the flavors I love so much in abundance that could make me feel like I was almost having a little getaway. To celebrate that I created my own Southwest Sunshine board on Pinterest celebrating those images. I find the images of the Southwest perfectly magical and inspiring and hope you do as well!

Looking at the rosemary and roasted garlic, I would use this to make a variation of chicken parme -san–the boneless chicken breasts are pounded very thin, then dipped in egg wash, then breadcrumbs and seasoning, fried in canola or olive oil till lightly brown and served with fresh, home made mashed potatoes. My mouth is watering!
