I have to tell you, it has become abundantly clear to me that brunch would be my favorite meal of all time and I would love to eat brunch-like meals every day if I could. That said though, I wonder if it would lose some of it’s shine and interest if daily brunch were possible – then it probably wouldn’t be as special anymore.
With Mother’s Day on Sunday quickly approaching I wanted to share some of my favorite brunch ideas with you from the archives as well as my new favorite way to make and eat french toast – my all time favorite breakfast item to begin with!

This delightful french toast is made with two slightly thick slices of challah spread with a little Nutella in between the slices. The ‘sandwich’ is then dipped in a simple egg custard mixture with a splash of vanilla, then fried on a hot griddle with a little butter till golden on both sides and the Nutella is warm and melted. I served it with just a sprinkle of cocoa powder or powdered sugar and a little melted butter. It was heavenly and sure to make any mom very happy!

Nutella Stuffed French Toast Recipe
Makes 4 servings
8 (1/2 inch) slices of challah
5 large eggs
1/4 cup half and half or heavy cream
1 teaspoon pure vanilla extract
4 tablespoons of Nutella, or more as desired
1 tablespoon unsalted butter for the griddle
Heat a heavy skillet or griddle until hot.
In a shallow dish whisk together the eggs, half and half and vanilla.
Spread 1 tablespoon or more of the Nutella generously on four slices of the challah. Top the Nutella with the other slices of bread to make sandwiches. Dip each sandwich in the egg custard mixture on each side – do not soak the bread, just on each side to coat nicely and soak in a little bit.
Melt the butter on the griddle or skillet and add the sandwiches. Cook 1 to 2 minutes on each side until golden and the egg is completely cooked. Serve hot with butter, cocoa powder, powdered sugar, fresh fruit, whipped cream, syrup, etc. and enjoy!
