Citrus Berry Terrine - French Fridays with Dorie

I’ve been pretty remiss for the last few weeks with my French Fridays with Dorie participation. I can’t believe how this Summer is getting away from me. That’s why I’m glad that we are actually on vacation at the moment this is posting and that for once I was enough ahead of the game to make this week’s recipe for the Citrus Berry Terrine before we left!

Generally I am not much of a gelatin fan, but I love all the things you can do with it. I especially thought this colorful and fruit laden concoction was especially fun. The kids loves that it tasted so ‘real’ and fresh – bright with the citrus and chock full of plenty of their favorite summer berries.

For the gelatin portion we made ours with only orange juice, then added in all the blueberries, blackberries and a few cut up strawberries into the mix along with the orange segments.

Those strawberry slices make this look so bright and refreshing. This was sooo good. Definitely something to make again.

The terrine looks wonderful – just like the book’s! This is definitely one of the better/more wholesome ways to enjoy gelatin snacks.
