Yes indeed, it is another Secret Recipe Club installment… but wait! It’s only been two days since the reveal on Monday for the Malted Chocolate Chip Cookies I made for my original assignment. And yet, apparently the theme of chocolate chips is still sticking with me since I chose to make this recipe from Connor’s Cooking.
You see, in the past couple of days Amanda contacted the group and let us know that someone’s blog had been ‘orphaned’ and wouldn’t have a post this month. Well, no one should be left out so I volunteered to quickly make something from Connor’s Cooking.
After all, the SRC is all about NO BLOG LEFT BEHIND 😉 With a community like this, it isn’t likely to happen and it makes me proud to be a part of such a fun group.
Indeed, it is quite a great little community we have though because I wasn’t the only one to step in and offer to help. In fact Nicole of Daily Dish Recipes was the quickest on the reply and has already made something from Connor’s Cooking and is included in the regular blog hop now. Amanda thought it would be fun though to do one more secret reveal of those that were able to still make something too. So we did. I’m not sure exactly how many more bloggers stepped in, but if you check out the special linky below then you’ll know!
So, I give you Chocolate Chip Cookie Dough Dip – it is a cream cheese dip with butter, brown sugar, vanilla and plenty of chocolate chips for dipping cookies (why yes, yes that is one of the Malted Chocolate Chip Cookies there – double whammy!), pretzels, fruit, etc. Let’s face it. This is not diet food. In fact, I don’t really even want to know the nutritional value. Here’s the thing though. In our house I have 3 kids. In our house I have 3 UNDERWEIGHT kids who are on the ‘put butter and cream cheese on everything’ diet. Seriously – I’m not kidding. We are working with a nutritionist and pediatricians to try to get these kids on track (that’s what happens when you have 3 kids all with special challenges). What a life!?
So, for me – I used extreme caution when snacking on this dip. But for the kiddos? Well, they can take a spoon and dig in at our house. I wanted to make a smaller portion of the dip with slightly less sugar so mine isn’t quite as thick and is slightly tangier from the cream cheese. I am also lazy and used the microwave instead of stovetop so I’ve included the modified recipe below.
Chocolate Chip Cookie Dough Dip
Adapted slightly from Connor’s Cooking
(original recipe and photos can be found at How Sweet It Is)
4 tablespoons butter (if using unsalted include a pinch of salt)
2 tablespoons packed light brown sugar
1/4 cup confectioners’ sugar
1/2 teaspoon pure vanilla extract
5 ounces cream cheese, softened
1/2 cup semisweet chocolate chips (I didn’t have any, but I think mini chocolate chips would be even better in this)
In a large glass measuring cup gently melt the butter in the microwave. Add the brown sugar and microwave until bubbly. Whisk together well. Add the remaining ingredients except for the chocolate chips and use a handheld mixer to beat and cream the ingredients together well till lighter and a little fluffy. If you want it to be thicker you can increase the amount of confectioners’ sugar up to 1/3 cup. Gently stir in the chocolate chips. You can serve it now, or it will set and thicken a bit more if you refrigerate it for a while. Serve with cookies, graham crackers, apple slices, bananas, pretzels, etc. and enjoy!
