Ha. And you would maybe think the Please Vote! plea was about the election. Sorry politically driven folks, I just don’t get into that mess here. You know what kind of mess I do get into here?

The slightly spicy, always delightful world of tacos. In fact, if I had to name one type of food I love possibly as much or more than pizza (I’m a simple girl, what can I say) it would be tacos. Lots and lots of tacos. It’s been mentioned here before, but it is worth mentioning again.

In fact, this time it’s worth mentioning and sending you on your way for the recipe. For both our sakes!

I was recently invited to be one of twenty food bloggers who would create a recipe using a product from Smart Balance. The contest would be open to voting for one month where our readers could check out the recipes and vote for their favorite. What’s in it for me? A chance at one of two trips to Canyon Ranch in Florida.

People. I NEED a vacation. Even if these tacos ended up being terrible, I would beg you to take pity and vote for me. I’m not too proud. I’ll take all the pity votes I can get.

The recipe actually makes a lot of this shredded chicken, so I ended up repurposing about half of the meat after our taco dinner and used it a lot of different ways. I have to tell you, each incarnation turned out even better than the last. Leftovers were not a problem and frankly I’m trying to figure out when I can sneak this right back into the rotation.

So, pretty please, go and vote for me! Remember I mentioned it was for only one of TWO trips? Well, if I win, I get to do a little old giveaway here on the blog for that other trip! So, you could totally win too! Woo hoo! And since we’re friends, I’m guessing you are probably desperately in need of a vacation too!

Worst case scenario? I don’t win and I make this tacos and pretend I’m in Mexico. It’s not like that hasn’t happened before πŸ˜‰

Although I don’t have pictures of all of the ideas of how to use this recipe I will be posting the pics of the soup version soon. In the meantime, you could also use this in quesadillas (sooooooo good!), on nachos (yep, we ate off this for days!), and on a pizza. See two perfect foods got married and had a taco pizza offspring. I love multitasking meals!
